November Perry

This blend of various Perry pear varieties was made up over three weeks at the end of October and start of November. The late season fruit tends to be rich and full bodied with notes of poached pear, dates, raisins, gooseberry acid, nettles, bitter herbs. This was racked once in the winter to retain natural sugar, bottled in the spring of 2024, and disgorged in spring 2025.
