Vincenzo hails from Naples in Italy where he studied hospitality while studying, although he has always been into wine. He grew up drinking wine with his family sourced from local farmers around Mount Vesuvius; as a child, they were allowed a small sip on big Sunday lunches. He enjoys red wines and his favourites are, of course, Italian wines, from various Italian regions: Taurus, Chianti, Barolo and Cannonau di Sardegna, in particular. In London, he likes to try new wines, his favourite being the one he hasn't tasted yet!

Caroline grew up in Brazil and left in 2015, cooking in some of the best restaurants in Europe. Her passion for food soon expanded into wine, and after a year studying in Bordeaux, she moved to London to take her WSET Level 4. She particularly enjoys playing with unusual pairings (a rare white grape called Romorantin is especially good with a proper Scotch egg!) and is also enthusiastic about single malts and her beloved, native Cachaça! She revels in the discovery of obscure grapes and cheerfully champions the quirky side of the wine world.

With her origins in Chile, Viviana always had a passion for wine and food pairing. While studying she worked part time for Concha y Toro vineyard and worked in locations across Chile. It is where she developed a huge appreciation for different wine varieties and the diverse terroir of Chile. Since moving to London, Viviana worked for luxury brands in fashion but was drawn back to wine especially the smaller producers and organic wines at Bottle Apostle. Viviana now has her WSET Advanced and loves to pass her knowledge on to customers in a great and fun way.
