Rice: Omachi; 65% polishing
Ripe, mellow tropical fruit, savory umami, springy but balanced Bodaimoto acidity rounded out with lactic rice sweetness, and unmistakable Omachi spiciness. A rich textured, full-flavored, pasteurized version of the brewery's 1859 Prototype. Not a classic style, but fun, especially when drunk hot - real umami hit.
