Rice: Kitanishiki, 66% polishing 
Fermented with the notoriously vigorous ambient Tamagawa yeast, bottled straight from the press. Intense notes of burnt sugar, caramleized mushrooms, dark, bitter chocolate, sweet soy sauce, tangy acidity, almost 'chewy' texture. Potent, gently warming alcohol.
