Bailhache Sauvignon Blanc

Sonoma Coast producer Ceritas (meaning Mineral in Spanish), focusses on small lot and terroir driven wines from cool coastal sites. This single-vineyard white is made using grapes from old vines grown on marine and sandy soils. Native yeasts are used for fermentation and maturation takes place in a mix of neutral oak and ceramic eggs. The result is a beautiful, textural white that shows elegance and poise. The bottle age ups the enjoyment and offers some early tertiary notes alongside the greengage pastry tart aromas. One to enjoy alongside classic French fish dishes.
