Hand harvested, short pre-fermentation maceration, fermentation in tank, transferred to one 660L cement egg, one neutral 300L French oak barrel, and one new 500L French oak barrel to finish fermentation. Aromatic and complex with notes of ripe peaches, citrus and herbs. Well balanced with a mouthwatering acid line, rich on the mouth, nutty, yogurt sensation and a bitter note to the finish.
