Fantasie der Schieferterrassen

The Schieferterrasse is a very famous still wine from this top producer, famed for its quartz-rich slate soils. Only in years when they have too much wine for the still production, they use some of the excess to make a traditional method sparkling wine that sits for 49 months on the lees before disgorgement. The result is a very complex wine with gentle bubbles that is dry, savoury, toasty and nutty with a touch of wet stones and petrol.
